You cannot change the keys to change the edition or do an in-place downgrade. You can however do in-place upgrade from standard to DataCenter. If you have installed “to several servers”, hopefully you have a volume license you pay less for your licenses if you have a volume license.

Call Microsoft and talk to a trained licensing specialist. Technically, the bits you installed are the same. There are different EULAs in multitudes of languages that are different, but the what is actually running is the same. Since licenses aren’t really installed, you should be able to relicense the physical server with the Standard Edition. The problem is that the installation, once selected, can only be activated with the Datacenter activation code, so if in the future you want to upgrade to a later release of the OS, you would be unable to upgrade to the release for which you have licensed on the system.

Bottom, line, it is a bit of a headache to do it any other way but to re-install, even though re-installing does not change one bit of anything that one or the other operating system is capable of doing.
